I remember going down a street that smelled of chocolate, but I did not know where the aroma came from. At the time, when they offered to work here, I realized. Without knowing it, I walked near where the factory was. It is as if the smell of chocolate had been warning me that later I would be part of my life.

Since 1991, the year I started working on La Candelaria chocolates, I have seen how much things have changed. Now we have more machinery and processes have been industrialized. It has been a great improvement. The final leap was in 2010 when we moved to the current factory.

Formerly the chocolate was brought in pipe and the unloading was done manually. It was selected by size, roasted, then peeled and ground with the stone mill. The husk many times people came to look for it to keep it for the carpets of religious festivities.

I started working as a delivery boy, it was a time of hard work and our chocolate came a lot in the small and medium business, which we could not leave unattended. We went to the smallest and farthest villages so that nobody would miss our chocolate.

The climate marks our rate of production. In October they begin to feel the first days fresh and the demand for chocolate is noticeable, and since a drop of snow has fallen we have to start producing more! It is a sign of identity for all, the thousand-year-old dragon tree of Icod and El Teide are on its label. Tenerife is where it is sold the most, but they also know our chocolate on La Palma, La Gomera and El Hierro.

I really like chocolate, I'm very sweet. The one I like most for the cup is green and yellow.
